Pork and green salsa

I found a good deal on a huge piece of pork butt at the grocery store today and put it in the crockpot. First, there is one onion sliced, then the pork butt, then I poured over a jar of medium green salsa. It smells delicious!

Setting a goal

Since I've been too tired to cook, I am setting myself a goal to find 2 recipes to make this week that use a pressure cooker. Next Saturday, I'll assemble the recipe and freeze it uncooked, then take it out and pressure cook it from frozen after work. I'm also going to find a good crockpot recipe to make this week.

I got sweet potatoes, carrots, onion, and sausage to put in the crockpot today. Not low carb but better than McDonald's.

I'm trying baby steps since making over every part of my diet and life keeps failing!

Eating junk and not cooking

Life's been full of upheaval for me for the last year. At one point in the trailer we were renting the mouse problem and sewer gas problem overwhelmed me and I just quit cooking. It was just a nasty space. We've moved into a house and it's got a sewer gas problem, too, but at least we can open the bathroom window and shut the door to keep it isolated.

Why are we jinxed with sewer gas issues???

Anyway, I'm finally getting the kitchen set up and ready to cook in even though I work almost every hour of the day. When I'm not working, I'm so exhausted I fall asleep when I sit down.

I made us eggs and bacon last weekend and will again this weekend. Yum! Otherwise, I eat McDonald's or other "junk."

We can't afford to eat out and eat prepared foods so I have to cut back on work and accept failure at work in order to take better care of myself. My diabetes is out of control and I don't exercise at all anymore. Leaving my state job for teaching was definitely a big mistake! My state job was pretty boring but I was able to go to my pool class right after work and take time to visit the doctor and dentist.

Oh, well, enough whining. Off to take a nap. Thank God for weekends even when they are full of catch-up work!

Egg muffins and falling off the wagon

Baked cream cheese egg muffins in early January - yum! Have not been eating low carb for the last two weeks due to medication-induced nausea but am feeling better, thankfully.

I notice an increase in the bad side effects from diabetes when I cannot stick to eating low carb high fat. Things like vision problems, yeast infections, etc. Yuck!!

My new favorite way to make hard cooked eggs - my steamer!  Easy to do, easy cleanup, and they peel so easily!

Ground beef and chili casserole

Verdict: Awesome!

We liked this casserole so yummy that I cooked it twice. Used as my starting point but I didn't want to bother with layering so I used chopped green chilis in the can. I also didn't use the seasonings or make a sauce.

Instead, I simply layered the ground beef / onion / chili / green enchilada sauce mixture with cheese, topped with cheese, and baked.

Really tasty and I served it with sour cream.

Went to a great two day training all about cooking beef and teaching the nutrition of beef for work.  The MOST fun and enjoyable training I have ever attended and was glad to hear them bring up the new research suggesting that saturated fat is not the source of all nutritional evil.

Had beef tenderloin, top blade, flank, and skirt steaks, among others.  Learned how to grill!

I'm excited to post things that I make from the training.

The salad my group made - beef tenderloin steaks and top blade steaks grilled over charcoal with fresh grapefruit, orange, and strawberries and a dijon and brandy dressing.  So tasty!
